What's for Dinner?

Since my husband asks that at least once a day!

* Lean boneless pork chops with a Mesquite rub and cooked on the grill.

* Spinach (canned) cooked with some olive oil and reduced fat feta cheese and salt and pepper.

* Salad - iceburg lettuce with some fresh garden tomatoes and a sprinkle of tomato and basil feta cheese. A dressing smorgasboard of Kraft Free Italian and Kraft Balsamic Vinegar dressings.

REVIEW of last night's dinner:

Not my crowning glory.... burnt the rice to a crisp in the microwave and DH overcooked the chicken on the grill a bit. Needless to say we replaced the rice with some curried wheatberry salad and seafood salad with crackers. I used some italian dressing to moisten the chicken as I ate it. The veggies turned out okay but I used a bit too much olive oil so you couldn't really taste the season salt flavor.

Overall just not a good meal for me and the rice thing reminded me I can't cook in the microwave. We were pretty lazy as the dishes are still sitting on the table too!
