Crockpot potatoes

From the Hungry Jack recipes....

5 boxes of Hungry Jack scalloped potatoes (I used the cheddar)
10 1/2 cups of water
2 - 12 oz cans of evaporated milk
4T of butter or margarine

Put potatoes and mix in the crockpot, then add liquid and margarine.
Stir well to mix thoroughly.

Cook on low 4-5 hours until mixture is think and potatoes are done.

YUM!

For WW people this recipe is 3 points per serving. I cut the receipe in 1/2 when I made it.

Tuna Noodle Casserole

with a little twist!

1 bag of whole wheat noodles
1 can of cream of mushroom soup
1T Worcestshire sauce
1 small can of mushrooms
1 pouch of albacore tuna

Cook noodles and drain water.
Preheat oven to 450 degrees.

Spray non-stick spray on baking dish.
Pour soup in bowl and put in about 1T of worcestshire sauce.

Put noodles in bottom, then layer some soup and tuna. (You may not need the whole bag of noodles)
Mix the layer, then layer again and mix, to integrate all 3 ingredients well.
Top layer should be noodles.
Then sprinkle with breadcrumbs or potato chip crumbs or cereal crumbs.

Bake in oven about 20 minutes or until top is brown and sides look crispy.

Serve with ketchup and/or hot sauce.

Easy Dinner....

Shredded pork sandwiches

1 pork tenderloin
1/2 -3/4 bottle of Italian dressing

Put pork in crockpot and pour italian dressing on to cover.
Cook on low about 6-8 hours.

Shred pork with a fork when done.
Pile on a bun.
Top with a piece of your favorite cheese, provolone sounds the best. Microwave on high 30 seconds to melt cheese.

This was so good, I had 2 sandwiches!

Alteration to Slow cooker Lasagna recipe

I made this again last night

BUT I used 16oz more sauce and I added about 4oz more cottage cheese and shredded mozzarella to the mixture.

I also put the crockpot on a timer so it only cooked for 6 hours on low instead of 8-whenever which I think it did the last time.

It was YUM!

On the fly Seafood Marinara

The other night I didn't want to make plain old marinara so I spruced it up!

2 cans of diced tomatoes
minced garlic (to taste)
olive oil (to taste)
1 can of minced clams
1/2 of package of albacore tuna
2 cans of mushrooms
Italian seasoning
salt and pepper

Put it all in a pot and stir until well heated and mixed through and tastes good!

It is great plain or over pasta :-)
